ENVIRONMENTAL CONTROL
In order to get the most from your wine the following environmental factors are essential for proper wine storage:

Temperature:
Temperatures greater than 70 degrees will age a wine too quickly, "cooking" the wine until the flavors and aromas become flat.  Furthermore, rapid temperature fluctuations may cause pressure changes within a bottle, forcing the cork upwards and permitting air to enter the bottle, leading to oxidation.

Humidity:
Humidity levels over 80% may encourage mold, while extremely dry conditions may cause high levels of evaporation and exposure to oxygen, spoiling the wine.

Light:
Wine stored in darkness is more likely to retain its clarity, aroma and flavor.

Stillness:
Wine should be still when aged to prevent the sediment from mixing with the wine.

Guarantee Wine Storage offers the highest degree of environmental control of any facility in New York City.  Our facility is a secure, temperature controlled, humidity controlled, dark and vibration free structure made of cement and steel.  This ensures that your prized wine will age at the rate it was intended.  The cellar is kept at a constant 55 degrees and 70% humidity with no more than a 2 degree temperature and a 2% humidity fluctuation.  These specifications are monitored by a computer system that provides hourly status reports which we will keep on record for your perusal.  The computer sends any fluctuations beyond these specifications to our 24-hour maintenance team for immediate attention and correction.  Storing your wine with Guarantee Wine Storage is a protection in your investment.
